Orin the little Master Chef

Lately Orin has been wanting to cook and bake stuff. He is finally starting to come out of the "I don't like any of this food" stage. I swear he has been in it since he was 2. Hamilton is still in it and it's such a drag. Anyways, Orin decided one day that he would make ebelskivers.  He was so cute to watch. He carefully measured out all the ingredients, whipped the eggs, and folded in the egg whites.  It didn't take him too long to figure out the cooking technique: brush with butter, fill, wait, turn with skewers, wait, stab, and lift.  He was very intent on doing it all himself and he did a fabulous job.

Ebelskivers are a yummy, little, sphere shaped pancake. You can fill them with all kinds of goodies but Orin just kept them simple. I'm sure it won't be long and he will be dishing out gourmet ones.  Here is a recipe for you to try out... if you have the right kind of pan.

Ingredients:
1 cup all-purpose flour
1/2 tsp. baking powder
1 1/2 TBSP granulated sugar
1/4 tsp. salt
2 large eggs, separated
1 cup whole milk
2 TBSP unsalted butter, melted
Confectioners’ sugar for dusting
Maple syrup for serving

Directions:

In a bowl, whisk together the flour, baking powder, granulated sugar and salt.
In a small bowl, lightly whisk together the egg yolks and milk. Add the yolk mixture to the flour mixture, using a wooden spoon stir until well blended. The batter will be lumpy.
In a clean bowl, using an electric mixer on high speed, beat the egg whites until stiff but not dry, peaks form. Using a rubber spatula, gently fold the whites into the batter in two additions.
Brush the wells of the ebelskiver pan with some of the melted butter and place over medium heat. When the butter starts to bubble, add about 3 TBSP batter to each well. 
Cook until the bottoms of the pancakes are lightly browned and crisp, 3-5 minutes. Use 2 wooden skewers to turn all the pancakes and cook until lightly browned on the second side, about 3 minutes longer.
Dust warm pancakes with confectioner's sugar and serve right away.
Makes about 21 pancakes.

Orin also decided one day that he wanted to make some ice cream. I had never before made any but he was determined to do it all on his own. He didn't need me. He went straight to work reading the instructions. He made raspberry ice cream. YUM! I didn't get a good picture of the outcome just a bad one with my phone, but I'll share it anyhow. I thought it was cute that he added the cherry on top.

Now I just need to get him to make dinner every night.

We make those Christmas morning. Love em. I found they're easier to get into the pan if you scoop the batter with a cookie scoop. My sister in laws put the batter in a pitcher or a squirt bottle too. Less messy.
